Why is the meat frozen?

The biggest reason is that is MUCH safer to store, handle and deliver frozen than fresh. For safe handling purposes, we would never deliver meat that isn't frozen. Once it is processed & packaged it is flash-frozen at the processor before the farmers even pick it up, and it stays that way until we deliver it.  A quickly frozen and properly handled cut of meat will suffer no loss of quality from the freezing process.

Most cuts can thaw in a few hours or overnight for large roasts and chickens.  If you're in a hurry, try soaking the package in warm water.  Never thaw meat in a microwave, it will become tough.
